It means the definitive truth. Like in this case, whatever happened onscreen. Canon is the show. In the dialogue; in the actions. Wikipedia (http://en.wikipedia.org/wiki/Canon_%28fiction%29) says: a body of works that are considered to be "genuine" or "official" within a certain fictional universe.

Basically, you can't negate anything that happened on the show in the fic.
